Long before it appeared on menus, ducks were already part of Ubud's daily rhythm. They wandered through emerald rice paddies at dawn, acting as natural pest controllers, leaving behind cleaner fields and better harvests.

Farmers didn't just raise ducks — they lived alongside them. This ancient bond between land, creature, and community is the very root of Bali's most legendary dish.

Balinese cooks began transforming these humble ducks using a slow, almost ritual-like process: marinated in rich blends of turmeric, garlic, coriander, and other spices, then steamed until tender, and finally deep-fried until the skin shattered into golden, crispy perfection.
